Oyster Omelette

Hello! I’m back again for another post. Today I will be recommending yet another delicacy that Singaporeans love and that is… Oyster Omelette!


This delicacy consists of an omelette mixed with small oysters. Starch is usually mixed into the egg batter, giving it a thicker consistency. Oyster omelette or (hao jian/orh luak) is the guilty pleasure of most Singaporeans. Reason being: lots of oil are used to create the crispiness of the omelette.
Today, I will be recommending my favourite oyster omelette stall.

Why is this my favourite stall, you ask? I remember the very first time I ate there; I was hooked on the very first bite when I sank my teeth into the crispy omelette! I became the stall’s fan almost immediately – so much so that I forget that the stall is closed on Tuesdays. Sometimes, I would visit the stall on Tuesdays all giddy with happiness that I was going to eat my favourite oyster omelette but imagine my dismay when I realized that they were closed on Tuesdays.



After many trips there, I found out that the stall owner had a unique way of cooking his oyster omelette. The omelette needs to be fried for a long period of time in hot oil to get that crispiness. The stall owner would tilt his pan so that the egg and mixture would slowly cook while on the other side of his pan, he would prepare individual portions and complete the dish. There is always a burst of fire when he adds the oysters in. This is because when the juices from the oysters mix with the oil, it causes the oil to sputter and catch fire. That gives the oysters a very… smoky flavour – it’s just so delicious that words are unable to describe it, you’ll just have to try it yourself!

There's very few oyster omelettes that are good in Singapore in my opinion. Probably because I am a rather fussy eater for oyster omelettes. I personally hate the fishy taste & smell of oyster but the omelette is always so good I can't resist it. There was only once where I had a really good oyster omelette as the oyster was really good with almost no fishy taste. It was my favorite and definitely the best I have ever eaten! But sadly, I have no idea what stall it was from and I have never found back the same amazing oyster omelette. Hopefully your recommendations is as good as the taste I missed!

I really love oyster omelettes!! Especially the ones I ate in Taiwan(their oysters are super fresh!! ), but I know I can't compare them with the ones in Singapore. The most important thing is to have a nice chilli sauce to go along with the omelettes! I love it to an extend whereby I brought chilli sauce along on my trip to taiwan (cause taiwan people eat it with peanut sauce not with chilli sauce) so that I can eat my omelettes with chilli! Will definitely try the ones you've recommended, thanks dear! (:
