Chai tow kway or carrot cake as most would call it, is
not meant to be confused with your carrot
cake. There is actually no carrot in chai tow kway! It is actually radish
cake that as been stir-fried with eggs, preserved radish and other seasonings.
In Singapore, there are so variations to carrot cake – the “white” and “black”
version. The “white” version does not use sweet soy sauce whilst the “black”
version uses sweet sauce.

What is so
special about this stall? Well, as compared to other stalls that sell carrot
cake, this stall actually steams
their own carrot cake! Nowadays, stall owners usually get their carrot cake
from factories. Nothing beats handmade food!
If you think
that is the only plus point this stall has, then you’re wrong. Usually, most
carrot cake stalls are either good for their white carrot cake or black carrot
cake. However, both versions of carrot cake are excellent from this stall! This
is because he employs different cooking techniques for the different versions
of carrot cake.
For the white
version, the cake is chopped roughly so that there are both big and small
pieces. The small pieces gets charred quickly so the crust is super crispy! The
big pieces allow you to enjoy the smooth and soft texture of the carrot cake.
For the black
version, the crust is not very important as the black sauce will soften the
crust even if it forms. Thus, he adds the sweet sauce twice – once in the
middle of cooking and once more just before serving. This is why his black
carrot cake glistens when you get your plate of black carrot cake!
