Chicken Rice is the first food that came to my mind
whenever I do not know what to have for lunch or dinner. This is because the
first food that I ate when I was a child was Chicken Rice. It is simple to take
away and when you eat in, the service is fast. The rice and the chili really
make the Chicken Rice taste even better. With all elements combined, the taste
is heavenly. What I like about Chicken Rice is the flavors that make it all
work so I went to Google about the process of making.
The
process:
The Chicken
1. Excess fats and skin is cut off so it can be used
later on.
2. A handful of kosher salt is rub all over to chicken to
remove trapped dirt and blood off the skin, including the cavity.
3. Use lukewarm water to wash the salt away.
4. Honey, Maltose, five spice powder, ginger juice, 1
juice of lime, water and light soy sauce and mix together in a bowl and bring
it to a simmer.
5. Use an ‘S’ hook so that the chicken can be upright.
6. Hold
the chicken upwards with one hand, generously ladle hot marinated mixture onto
the chicken to "tighten" the chicken skin, till the whole chicken is
coated with the marinade and is 20% cooked on the outside and coloured light
brown.
7. Hang
the chicken to air dry or put in the fridge for 1-2 hours.
8. Prepare a deep pot of hot oil. When it is hot enough,
lower the heat and slower put the chicken in. The hook is use to take out the
chicken easily after cooking.
9. Cook the chicken until the skin is browned and crisp.
Take the chicken to set it aside and hang it for 15 minutes. So as to cool it
and let it drip excess oil away.
