Fried Carrot Cake

Chai tow kway or carrot cake as most would call it, is not meant to be confused with your carrot cake. There is actually no carrot in chai tow kway! It is actually radish cake that as been stir-fried with eggs, preserved radish and other seasonings. In Singapore, there are so variations to carrot cake – the “white” and “black” version. The “white” version does not use sweet soy sauce whilst the “black” version uses sweet sauce.

The “black” version of carrot cake.

The “white” version of carrot cake.

As usual, I will be recommending this stall that sells the best carrot cake in Singapore!

Address:
Fu Ming Carrot Cake
Redhill Food Centre
Blk 85 Redhill Lane
Singapore 150085
12pm to 12am

What is so special about this stall? Well, as compared to other stalls that sell carrot cake, this stall actually steams their own carrot cake! Nowadays, stall owners usually get their carrot cake from factories. Nothing beats handmade food!
If you think that is the only plus point this stall has, then you’re wrong. Usually, most carrot cake stalls are either good for their white carrot cake or black carrot cake. However, both versions of carrot cake are excellent from this stall! This is because he employs different cooking techniques for the different versions of carrot cake.

For the white version, the cake is chopped roughly so that there are both big and small pieces. The small pieces gets charred quickly so the crust is super crispy! The big pieces allow you to enjoy the smooth and soft texture of the carrot cake.
For the black version, the crust is not very important as the black sauce will soften the crust even if it forms. Thus, he adds the sweet sauce twice – once in the middle of cooking and once more just before serving. This is why his black carrot cake glistens when you get your plate of black carrot cake!

Sounds delicious? It definitely is! Go give it a try and comment below. J

String ray

Sambal stingray, also known as Spicy Banana Leaf Stingray[1] and by the Malay name Ikan bakar (barbecued fish), is a Singaporean seafood dish. Prepared by barbecuing stingray, it is served with sambal paste atop. Sambal stingray can be easily purchased at food centers in Singapore.Finding a good String ray store is a different story
So today i am going to share with everyone my " secret " String ray Store

Location : Yung Sheng Road, #03-178 Taman Jurong Market & Food Centre

BQ Seafood’s sambal stingray sizzles in every sense of the word! Presented on a hotplate, the fish is served sizzling hot and retains its heat throughout the meal. The exterior is beautifully browned, while the flesh remains gorgeously tender and succulent.
Although the fish could do with a more distinct charred flavor, the intense sambal more than makes up for any blandness. The chilli is so spicy it’ll make you sniff! Our tastebuds were left tingly numb at the end of the meal. In addition to belachan, the sambal has a bold scent of fresh herbs.
Thankfully, the topping of sliced fresh shallots helps to provide some relief. And the side dip of tangy pickled shallot and fresh lime provides another piquant zest that lifts the taste to a heavenly level. In short, B.B.Q. Seafood’s sambal stingray is simply shiok!

Lor Mee

I am sure not many people will like food that is sticky and gooey, but today, I am going to change all of your opinions on sticky and gooey food! Today’s dish that I will be introducing to all of you is Lor Mee. Lor mee or is a Chinese inspired noodle dish. It is served in a thick starchy gravy with thick flat yellow noodles. It is a Hokkien dish. Usually, ingredients like ngo hiang, fish cake, pork, char siew and eggs are added into the dish.

Today, I will be recommending this stall that sells the best lor mee in Singapore.
Address:
Bukit Purmei Lor Mee
Blk 109, Bukit Purmei Ave
#01-157
7.30am to 3.30pm
Closed on Mondays
So, you might be wondering – why is this stall’s lor mee the best? My answer to your question is the contrast of textures. It is not an easy feat to get so many textures in a perfect balance. However, the stall owner managed to do just that. In that simple bowl of lor mee, it is gooey, sticky, crunchy and savoury. The stall owner said that his sauce is made from pork bones, spices and egg whites. It is made fresh every morning when he goes to the stall at 5am. The chopped garlic and black vinegar also plays an important part in balancing out the taste, giving it a well-balanced and rounded plate which coats the whole of the plate.

Go give it a try and comment to tell me whether you liked it or not! Till next time, bye! J

Char Kway Teow

Greetings! Today’s blog post will be on Char Kway Teow – as stated in the title! Personally, I feel that char kway teow is one of the most famous food in Singapore. In today’s post, I will be recommending two of my favourite char kway teow stalls.

Char Kway Teow or 炒粿 is made from flat rice noodles and stir-fried with light and dark soy sauce, prawns, fishcake, cockles, bean sprouts, Chinese sausage and eggs. Traditionally, char kway teow is fried in pork lard to enhance the aroma.

The first stall that I will be recommending today is Outram Park Fried Kway Teow Mee.
Address:
Outram Park Fried Kway Teow Mee
Hong Lim Market and Food Centre
Blk 531A, Stall 02-17
Mon - Sat: 6am to 4.30pm
Closed Sun and Public Holidays

Many consider this stall’s char kway teow to be the best in Singapore. Reason why this char kway teow is so popular as compared to others? The secret is... the eggs! The stall owner said so himself that on average, each plate of char kway teow from his stall will get at least one and a half eggs, as compared to the usual one egg from other stalls. Also, the eggs from his stall are not cooked as much so it gives the char kway teow a more creamy texture. Sounds delicious? It sure is!

The second stall that I will be recommending today is Hill Street Fried Kway Teow!
Address:

Hill Street Fried Kway Teow
Blk 16, Bedok South Road, #01-187
Opened for lunch till about 4pm. Then around 6pm till all he runs out of food.
Closed on Mondays

Honestly, I think all char kway teow fans need to try this at least once in their life! The unique selling point of this char kway teow is the way the stall owner cooks it! Instead of only using the ladle to fry the char kway teow like most stall owners do, this stall owner holds a ladle in his right hand and chopsticks in his left. Also, the stall owner spends a lot of time and effort in preparing the ingredients. For example, for each and every single beansprout, it has the head and tail removed – leaving only the best part of the beansprout. The lard bits are also crunchy, crispy and oh so savoury. It’s no wonder this stall’s char kway teow is also one of the best in Singapore!

I have come to the end of my post. Comment below and share with me what are some of your favourite char kway teow stalls!

Roti Prata

Have you ever wonder how Roti Prata was made? From what I observed while queuing up for it. The chef flip the dough to make it into a very fine and thin layer then, he fold in from each corner and fold on again from the 4 ends. There, a plain prata is made, however it is not finished as it need a fry and a crispy prata is serve with a plate of curry. There are tons of different prata, whether in shape or sizes. There are Roti prata with egg, with onion or with cheese etc. You can find Roti Prata anywhere in Singapore. It is a food that must be eaten when you come to Singapore. It is a food that you would not miss!

The nicest Roti Prata I even ate was at Little India. The curry can make you mouth watery and the prata made are really worth it. Go on have a try of it.

Lastly, a question to post to you. Where have you had your nicest Roti Prata even in Singapore?

Chilli Crab

“Chilli crab!!” Whenever you heard these words, you always think about Singapore or home. It is one of the famous delicacies in Singapore which tourists will try out when they come for vacation. As for us, Singaporeans, some of us eat it on special occasions like Chinese New Year or in a Wedding etc while others eat it in a family gathering.

For me, I only eat it once or twice in a year during Chinese New Year. It was a long time since I eat Chilli crab. I miss the taste of it and gravy that goes with the rice. It is really tasty and it always remind me of home.
